Good things come in threes. This week, Yuan Wonton, Denver’s hottest food truck; Pho King Rapidos, a Vietnamese food truck with global influences; and Sweets & Sourdough, a delivery-only artisan bakery, debuted their shared restaurant space in Park Hill.<\/p>\n
The restaurant:\u00a0<\/strong>2878 Fairfax St., Denver <\/p>\n <\/p>\n About:\u00a0<\/strong>This isn’t your typical restaurant setup. Yuan Wonton, Pho King Rapidos, which is operating under the name Thuy by PKR, and Sweets & Sourdough plan to alternate their days and hours of operation in the same space.<\/p>\n “It’s hard enough building one restaurant,” Penelope Wong, owner of Yuan Wonton, wrote on Instagram. “We built three in one.”<\/p>\n Wong met Amy Patterson and Rachel Elkon, owners of Sweets & Sourdough, through the shared commissary space where they prepped the dishes for their trucks. And she met husband-and-wife duo Long Nguyen and Shauna Seaman, owners of Pho King Rapidos, through the food truck circuit, collaborating on events together. The trio of businesses have created a sign with each of their three logos on it, and the respective business\u2019 logo will be lit depending on which is serving food that day.<\/p>\n <\/p>\n What’s on the menu:\u00a0<\/strong>Yuan Wonton is serving its chili-garlic wontons and homemade dumplings on Wednesday and Thursday from 5 to 9 p.m. The former food truck will also have an all-Asian breakfast menu on Fridays from 9 a.m. to 2 p.m.<\/p>\n On Thursday from 5 to 9 p.m., Thuy by PKR is serving a collaborative menu with Yuan Wonton. And on Friday and Saturday from 5 to 10 p.m., the Vietnamese-inspired food truck, which also has a spot in Avanti Food & Beverage, is serving some of its classics, like the pho banh mi, as well as more family-style Vietnamese meals.<\/p>\n Sweets & Sourdough wants to be the Park Hill neighborhood’s staple retail bakeshop, open Thursday through Sunday from 7 a.m. to 2 p.m., selling loaves and pastries and serving coffee.<\/p>\n “We will be a revolving door of comfort and cuisine that is nostalgic and important to us, a revolving door of first generational unique twists on traditional flavors; and we will be a revolving door of scratched baked loaves and breads and swirls of pastries,” Wong wrote on Instagram.<\/p>\n More:\u00a0<\/strong>Reservations for Yuan Wonton and Thuy by PKR are available online, and walk-in seating is available.
